Meat and Potatoes

Tonight was meat and potatoes night!

Its been a long week and the week is not even over, so meat and potatoes for dinner is good comfort food. Many of you may not know this, but I have been without Food Network for almost a month due to New York's Cablevision being in a battle with Scripps network. Tonight it is back, and I am glad I can watch Diners, Drive-ins, and Dives once more!

I am on a Penzey's kick this week it seems. This was actually the first time I used their poultry seasoning after purchasing it around Thanksgiving. A good investment for quick chicken dishes on a weeknight, let me tell you! I found a basic recipe from Martha Stewart for buttermilk baked chicken and made it my own. I had a baked potato sprinkled with parsley and some honey glazed carrots. The wine was a lovely Chilean Sauvignon Blanc.

Buttermilk Baked Chicken
1 1/2 pounds skinless chicken thighs
1 1/2 cups of plain breadcrumbs
1 tablespoon poultry seasoning (I used Penzey's)
1 tablespoon grated Romano cheese
1 teaspoon salt
1/2 teaspoon fresh black pepper
1 1/2 cups buttermilk (I used lowfat)
1 teaspoon hot sauce

1) Preheat oven to 400 degrees and grease a baking sheet
2) Combine bread crumbs, poultry seasoning, and cheese in a bowl.
3) Combine buttermilk, salt, pepper, and hot sauce in another bowl and whisk well.
4) Pat chicken pieces dry and dip into buttermilk, shaking excess coating off. Dip into bread crumb mixture and fully coat.
5) Bake for 25 minutes until chicken is a nice golden brown.


  1. Comfort is always good during a stressful week. I may have to check out the poultry seasoning-that looks really good.

    Glad to hear that FN is back on the air. It's great way to enjoy your comfort food w/ a glass of wine and your favorite FN show.

  2. I got a boatload of Penzey's spices for the holidays. Ive really enjoyed experimenting with them. I would love to come home to a dinner like week has been CRAZY! By the way, I really appreciate your kind comment related to my prison experience. TGIF..almost :)

  3. I wish I had a Penzeys near me.. I guess Ill have to order them on line. The chicken dish sounds delicious and I love how easy it is to prepare.

  4. Yeah i so agree,comfort is a good thing 24 by 7 specially if it includes meat and potatoes-and ur delcious creations.

  6. ah, hearty meat & taters. i love the simple and straightforward seasoning on your chicken, although i'd go ahead and use about five times more hot sauce. do you think i have issues? :)

  12. I would go crazy without the food network shows. I wish I could get to a Penzey's. There are so many of their spices that I would like to try. The chicken sounds easy and delicious,especially for a weeknight meal.

  13. Comfort Food. Ahhh the two magic words. I love it. Anthony Bourdain is huge in Sydney. There is just something about that man that Aussies love.

  14. I'm so lucky to be in the land of Penzey's here in WI, though I do prefer their "sister" company The Spice House, since it reminds me of the hole-in-the-wall co-ops I grew up with. Another nice-looking recipe, and the wine looks like a good match, too!
